Mindful Meals is owned and operated by the husband and wife team of Kristin and Blake Meyer.
Both active in the Central Florida CrossFit community, Blake and Kristin saw the desire from athletes for quick and healthy meal options that were still flavorful and filling. They set out to design meals suited to satisfy even the most active person while utilizing only the freshest and most in-season products available.
While Mindful Meals is overwhelmingly popular with the fitness clientele in which our roots began, the business has grown to serve busy families, the elderly and even local professional athletes.

Kristin Meyer – Owner and Chief Executive Officer
Kristin has had a lifelong passion for food and cooking, having grown up in a family of chefs, restaurateurs and self-proclaimed foodies.
After graduating from the University of Central Florida, Kristin worked in the corporate world of food sales and traveled throughout the Southeast as a Regional Sales Manager for 6 years.
Following the birth of her first child, Kristin became a stay-at-home mom, but the desire to get back in the business world was always close at hand. It was during a chance conversation with some friends that the idea for Mindful Meals came about and from there the business blossomed.
Blake Meyer – Owner and Chief Operating Officer
Before establishing Mindful Meals with his wife Kristin, Blake worked for 12 years as a sales and marketing specialist for various companies throughout Central Florida.
His passion for health and fitness, combined with his executive experience, make it easy for Blake to discuss and market the Mindful Meals plan throughout the state.
Blake is the friendly voice you will hear when reaching out to us over the phone and has always lived by a motto of 100% customer satisfaction and doing whatever it takes to make sure you love Mindful Meals!
Angelica Medina- Kitchen Manager and Head Chef
Mindful Meals was proud to welcome Angelica to our team in July 2017. She studied Culinary Arts at Daytona State College and graduated with honors Summer 2017.
Angelica works daily to bring new and innovative ideas to the Mindful Meals menu and to improve on our current offerings. She considers each meal she creates an opportunity to show the Mindful Meals clients that healthy, fresh eating can still be delicious and inventive
Lauren Thornton- Director of Administration
Lauren is one of the original Mindful Meals employees who helped us grow from our humble roots in 2015 to the large-scale operation we are today. She is responsible for all office and administrative takes and keeps Mindful Meals running smoothly from day to day.
Lauren graduated from the University of Central Florida with a dual degree in Psychology and Criminal Justice. .
